This creamy cold pasta salad recipe is bursting with fresh ingredients like tomatoes, red-green and yellow capsicum, olives and onions. The ranch-mayo dressing is the perfect balance to provide flavor and creaminess without overpowering the other ingredients.

- 100 gm Elbow Pasta
- 1 Tomato (chopped)
- 1/2 Green Capsicum
- 1/2 Red Capsicum
- 1/2 Yellow Capsicum
- 1 tsp Black Olives (chopped)
- 1/2 Onion (chopped)
- 200 gm Mayonnaise
- 100 ml Sour Cream
- Bring a large pot of lightly salted water to a boil.
- Cook pasta in the boiling water, until cooked through but firm to the bite.
- Put it in cold water and drain.
- Combine pasta and veggies in a bowl.
- Add the mayonnaise and sour cream.
- Mixing well and refrigerate your creamy pasta salad and serve chilled.
- You can also prepared this creamy pasta salad recipe by adding other veggies, fruits, boiled eggs, chicken and ham or the combinations of these.
