  1. Peel bottle gourd and grate with the help of grater.
  2. Put this shredded bottle gourd in pressure cooker and add 50 ml water in it. Cook it till one whistle.
  3. Release pressure of your pressure cooker with slight lifting of vent weight, and open the cooker immediately.
  4. Sieve boiled bottle gourd and pour a glass of cold water over it so that the bottle gourd will not become sticky and blackish.
  5. Let this boiled bottle gourd cool itself.
  6. Meanwhile, beat yogurt properly with the help of beater. If your curd is too thick, you can add some water in it. We need the consistency of beaten curd little thicker than milk.
  7. Add bottle gourd and all the spices in this beaten curd. Mix it well.
  8. Your delicious bottle gourd raita is ready. Serve it chilled as a side dish with main course dishes, i.e. Roti, Pulav (Pilaf) or Kabab.
