Thandai recipe (ठंडाई रेसिपी) is a traditional Indian cold drink recipe. An authentic thandai recipe is made by almonds, pistachio, black pepper, poppy seeds, muskmelon seeds, fennel seeds, sugar, milk, saffron and green cardamom.

Thandai is considered as a very good energy drink in India. It also prevents from heat strokes because of which it is very popular drink recipe in North India.

Thandai has a special significance on Shiva Ratri and Holi festivals.

Thandai Recipe Video:
Thandai Recipe : Step by Step Instructions
  1. Soak all the spices and nuts for 2 hours in water.
  2. Make thick paste of these spices.
  3. Now mix sugar and water in a vessel and cook it on medium flame for 10 minutes.
  4. Add the paste of the spices in this sugar syrup and cook for 5 minutes. We need honey like consistency of it.
  5. Finally add saffron, green cardamom powder and rosewater in it and mix it well.
  6. Your delicious thandai is ready.
  7. Let it come at room temperature.
  8. Then fill it in a clean and dry bottle and store it in fridge. You can use it for 1 month without adding any preservative.
  9. Pour 4 tea spoon (or as per taste) thandai in a glass and add a glass of milk to serve it. You can also add few ice cubes to serve it chilled.
Recipe Notes
  1. If you will not store it in fridge, then it will become sour within 3 days. So either keep it in fridge or add food preservative in it.
  2. If your spices and nuts paste is not very fine, then you can also sieve it before filling in bottle.
