Lauki ki barfi recipe (लौकी की बर्फी रेसिपी) or bottle gourd barfi recipe is a popular dessert recipe from Indian cuisine. It is made by bottle gourd, sugar, khoa and dry fruits.

Grated bottle gourd is boiled on medium flame for few minutes. Sugar, khoa and dry fruits are then add in it. This viscous mixture is moulded and the cakes are cut from it when it sets in mould.

Lauki ki barfi recipe is also considered as festival recipe and fasting recipe in India.

  1. Peel the bottle gourd and grate it.
  2. Heat 2 tsp ghee in a karahi and add grated bottle gourd in it. Cover the lid and let it cook on medium flame until soft.
  3. Add sugar in it.
  4. Cook it on medium flame by stirring it occasionally until all the water vaporize.
  5. Grate khoa and add in it.
  6. Finally add chopped almonds, cashew nuts and green cardamom powder.
  7. Check the consistency of the mixture to get assure whether the mixture is ready to mould or not.
  8. Take 1 tsp mixture and make a ball. If it is binding properly then the mixture is ready.
  9. If it is not binding due to high water percentage, then cook it for some more time on medium flame.
  10. But, if it is not binding because you overcooked it and it becomes very dry, then add small amount of boiled milk in this mixture and cook on medium flame for a while.
  11. Grease a thali with ghee. Pour the entire mixture in it and tap your thali to let the mixture spread uniformly.
  12. Let the barfi set for 2 hours.
  13. Cut the cakes of your lauki ki barfi and serve it at room temperature.
