  1. First of all, soak saffron in milk so it will give nice color and aroma till we do other preparations.
  2. In addition to this, also soak rice in plain water for a while.
  3. Now, heat ghee in a pan and sauté cinnamon stick, bay leaf, cloves, green cardamom and black cardamom in it at low flame till these spices give nice aroma.
  4. Add fennel seeds powder, cardamom powder and sugar in the roasted spices.
  5. Drain your rice and add roasted spices to rice.
  6. Add milk with saffron, water and salt to taste.
  7. Then cover the lid, and let your rice cook on medium flame until whole water is absorbed by rice.
  8. Meanwhile we’ll heat 2 tsp ghee in a separate pan to roast almonds, walnuts and cashew nuts one by one
  9. When rice cooked completely, serve in a platter and garnish with all the dry fruits and fresh fruits.
  10. Very delicious, aromatic, colorful, healthy Kashmiri pulao is ready to win the hearts of your family members and guests.
