Kairi ki Launji Recipe : Step by Step Instructions
  1. Cut green mango in 16 pieces.
  2. Heat oil in a pan and crackle fenugreek seeds, fennel seeds and onion seeds.
  3. Now add green mango, salt and turmeric powder in it.
  4. Put a lid on pan and cook green mango on medium flame for 10 minutes.
  5. Add sugar, red chili powder and water in it and mix it properly.
  6. Cook it for another 5 minutes on medium flame with open lid.
  7. Delicious, sweet and sour Kairi ki launji is ready.
  8. Serve it hot or at room temperature with roti, paratha or puri.
Recipe Notes
  1. If you store it in fridge, then you can use it for 1 month.
  2. Jaggery is also used in spite of sugar in many parts of Rajasthan in this recipe.
